San Francisco restaurants can officially serve customers in public spaces on Friday, but before businesses transition to al fresco dining, they’ll need to make sure they’re following the updated health safety rules.

On Tuesday, San Francisco Department of Public Health released preliminary directives that restaurants will need to follow if they apply for the Shared Spaces Program – a free permit that will allow restaurants to serve customers on sidewalks, partial or whole streets, and other public areas.

“Opening our restaurants is a great step that will help our small businesses that are struggling, our workers who need paychecks, and our residents who are ready to safely sit outside and enjoy a meal,” Mayor London Breed said in a statement Tuesday. “Our continued reopening is dependent on each of us, as customers, employees, and San Franciscans to do our part by wearing our face coverings, keeping social distance, staying home if sick, and following the other health guidelines that will slow the virus spread.”

By and large, the health safety directives SFDPH shared for outdoor dining won’t drastically pivot from already established guidelines. Restaurants with outdoor seating will still maintain 6-foot visible markers installed during takeout service, employees will continue to frequently wash their hands, and both staff and customers will need to wear masks.

Customers can safely remove masks while seated, but anytime they stand up to leave the table, they’ll need to cover up and make sure they wear masks if they use the restroom.

As for exterior table arrangements, a 6-foot distance should be established, or restaurant owners will need to add physical barriers to tables that cannot be moved. Restaurant owners can also remove seats and place signage for tables not used for dining.

Another guideline listed by the SFDPH is to limit outdoor seating to no more than six persons unless all members are from the same household. Customers will be encouraged to read restaurant menus on their phones, or restaurants can also provide single-use menus or laminated ones that should be sanitized after each use.

Restaurant health inspections will largely remain the same to their pre-coronavirus days, according to Terrence Hong, supervisor of San Francisco Department of Public Health.

"What we’re going to look for in terms of proper hygiene and making sure that foods are cooked in the right temperatures, that doesn’t change," Hong told SFGATE. "It’s not as if we haven’t been around infectious diseases before. The only thing is that now we’ve added COVID-19 to that list."

San Francisco’s Joint Information Center added that the DPH will also check whether restaurants are considering pedestrian flow in public right of ways and social distancing in order to operate.

Final guidelines made by SFDPH will come out later this week and can be found on their website.

Restaurants that are interested in applying for the free and temporary Share Spaces permit should apply at SF.Gov here. On June 15, other businesses will have the opportunity to apply for Shared Spaces permits. Indoor dining is expected to begin on July 13 in San Francisco.
